I Have been all over this website called “food gawker . com” (obviously with no spaces) I absolutely love it! There have been so many wonderful ideas on it. So the First one I tackled was Buffalo Chicken bites. Here is the original recipe, I did modify it because I didn’t have everything I needed for it and I can’t stand Blue cheese.
BBQ Chicken Bites
2 Chicken breasts cooked and shredded (or maybe more if you don’t want the desert with it)
1/4-1/2 c. shredded cheddar cheese (depending on how much cheese you like)
1/3-1/2 cup Favorite BBQ sauce enough to give it a stick together texture and taste (I love sweet baby rays)
1 tbsp active dry yeast
2 tablespoons brown sugar
1 cup warm milk ( I used 2%)
3 cups of flour
To make the BBQ chicken mixture, in a small bowl, combine the chicken, cheddar cheese, and BBQ Sauce, then set aside.
I put this in my bread mixer and it worked wonderfully! In a 1 cup measuring cup, heat the milk and then add the 2 tablespoons brown sugar stir together until brown sugar has dissolved then add in yeast stir and let foam (about 3-5 min). Pour milk,brown sugar, yeast mixture into the bread mixer and set on dough setting then add 2 1/2 c flour then slowly add the last 1/2 c of flour a little at a time until a soft dough forms. My mixer has a timer for the dough to rise so at this point I get to walk away your alarm will go off after about 1.5 hours. if you were mixer with a stand mixer or by hand knead it out for 7-10 min then put in a lightly oiled bowl, cover with plastic wrap and let rise in a draft-free place at warm room temperature until doubled and bubbles appear on surface, about 2 hours.
To make the BBQ chicken mixture, in a small bowl, combine the chicken, cheddar cheese, and BBQ Sauce, then set aside.
Preheat oven to 400°F with rack in the middle of the oven. Line a baking sheet with parchment paper; set aside.
Turn out dough onto a lightly floured surface and cut into 4 equal pieces. Lightly dust your hands with flour, then gently roll and stretch 1 piece of dough to form a 12-inch-long rope. Flatten dough and arrange so a long side is nearest you, then roll out to a roughly 12- by 4-inch rectangle with a lightly floured rolling-pin. (If making desert too use 1/3 of chicken mixture) Spread one-fourth of BBQ chicken mixture into the rolled out dough then roll it up I closed the ends like a burrito. Cut rope into 12 pieces and transfer to a sheet pan. Make 3 more ropes with remaining dough, filling and cut into pieces, transferring to sheet pans (unless you are making desert too then leave one rope set aside. they say to Let rest at room temperature, uncovered, 30 minutes (dough will rise slightly). But I didn’t and I think they turned out Just fine.
Bake buffalo chicken bites in the preheated oven for 7-10 minutes or until the tops are lightly browned. Remove from oven and serve.

Chocolate Carmel Banana Bites
this is only a recipe for one rope but it is easily adaptable
I have my left over rope from the above recipe
1 large banana or 2 med bananas
1 tbsp Chocolate sauce
1 tbsp Carmel sauce
I rolled out the rope to the same 12×4 rectangle layer the cut up banana pieces in a line down it then drizzled chocolate and caramel sauce over them (you don’t need much because as they heat in the oven the sauce becomes thinner and spreads). Roll and bake 7-10 min remove from oven let sit for 5 min cut into 12 pieces and add a little bit of whip cream on top to fancy it up a little if you want. (In the pic mine were only cut into 3 pieces) I also have tried this desert with crescent rolls too. Also very good. My husband thinks the crescent rolls are better than with this dough. for those I take the rolls out of the container and leave 2 together then pinch the seam together again. Then cut the rectangle into 2 squares. Then put the bananas in the middle of it and bring the four corners up in the center and pinch together. then cook for time stated on tube. let sit for a few min then enjoy!
