Meatloaf cupcakes

Well My husband loves everything MEAT! I mean what man doesn’t right!?!?!?!? Things 1 & 2 they are a totally different story. Thing 1 does like the chicken salsa that I have posted about, but otherwise neither one of them like meat much at all. SO after seeing a post on Pinterest about someone having made Meatloaf Cupcakes and her children ate them I thought I would give them a try. My kids know what cupcakes are but really my kids are kinda deprived they don’t get candy, cake ice cream and cupcakes often (only at birthday parties and that only applies to the cake, we eat frozen yogurt so they do get that but I eat mine with no toppings or just the fruit for toppings so it is mainly healthy, and they NEVER get candy…. We do use healthy fruit snacks for potty training incentives but that’s it)…. I love that my kids like to eat carrots and string cheese as snacks. they call the organic animal crackers cookies and I am ok with that!
Meatloaf
2 lbs ground beef
1/2 c bread crumbs
1/2 cup chopped celery
1/2 cup chopped onions
1/2 cup shredded carrots & Zucchini
and then I use the seasoning packet from the store (I like the generic one) and add the other ingredients not already mentioned except the ketchup (I’m weird and like the taste without it). I put a golf ball size ball in each cupcake slot and baked for 35-40 min
Potatoes
I peeled cubed & boiled 3 large potatoes Drained the water then put back on the low heat to cook the rest of the water out some, as I added 1/2 stick of butter let it melt and mix completely, then add 1 cup sour cream mix well I also add some dried chopped onion, pepper and a little bit of garlic powder to taste. They should be creamy but stiff enough to put on the top of the meat loaf I didn’t have time to pipe it but an easy way if you don’t have a piping bag with tips is to put the potatoes in a ziplock bag cut a bottom corner off and you can do it that way. I just spooned it on top and smoothed it around some then i topped with some chives.
Both Thing 1 & 2 loved it.
